WINE MAKING PROCESS
The Montebruna Barbera d'Asti undergoes fermentation in temperature-controlled stainless steel tanks for about 12 days, utilizing pump-overs and delastage for skin extraction. Post-fermentation, it experiences malolactic fermentation and a 6-month aging period in large wooden barrels (20 and 55 HL). The grapes are harvested in October. Braida's winemaking philosophy, established by Giacomo Bologna, includes innovative practices such as the early adoption of barrique aging for Barbera.
