WINE MAKING PROCESS
The winemaking process for this Montefalco Sagrantino begins with a hand harvest in early October. Fermentation utilizes selected yeasts and lasts for about 15 days, followed by a 20-day maceration period. Malolactic fermentation takes place in stainless steel tanks. The wine is then aged for 12 months in French oak tonneaux, and a minimum of 4 months in bottle before release. These techniques are employed to develop the wine's characteristic structure and aging potential.
