WINE MAKING PROCESS
The Montes Alpha Special Cuvée Pinot Noir 2020 is produced from hand-harvested grapes. Fermentation is carried out with natural yeasts at low temperatures, utilizing a combination of traditional methods and carbonic maceration, with gentle punch-downs for color extraction. Some batches use destemmed, semi-destemmed, or whole-bunch grapes. Malolactic fermentation takes place in stainless steel tanks or barrels. A portion of the wine (35%) is aged for 10-12 months in French oak barrels, with a small percentage of new oak, before being blended with the unoaked portion.
