WINE MAKING PROCESS
The Montespejo Blanco Joven is produced using a meticulous winemaking process designed to preserve freshness and aromatics. The Lairén and Moscatel grapes undergo a cold maceration for 12-18 hours, followed by the careful selection of free-run must extracted at low pressures. Fermentation occurs in stainless steel tanks at a controlled temperature of 10-12°C. Post-fermentation, the wine is aged on its lees for three months in stainless steel tanks to develop texture and complexity before bottling.
