WINE MAKING PROCESS
The grapes for Morellino di Scansano Roggiano are harvested in late September. Following harvest, carbonic snow is used for preservation. Maceration occurs at a hot temperature (35°C) for 12 hours, followed by fermentation at a controlled temperature (max 27°C) for 7 days on the skins. Malolactic fermentation is completed by November. The wine is then aged for 4 months in stainless steel tanks on fine lees, with at least 3 months of bottle refinement before release.
