WINE MAKING PROCESS
The winemaking process for this Morgon is deeply rooted in natural and traditional methods. Grapes undergo semi-carbonic maceration for 10 to 21 days using whole clusters and ambient yeasts, with no added SO2 or cultured yeasts. Following fermentation, the wine is aged for about nine months in used Burgundy barrels and older oak foudres. It is then bottled unfiltered. The domaine offers versions with minimal added sulfites and a 'Sans Soufre' (no added sulfite) option. These practices are designed to preserve the purity of the fruit and the expression of the Morgon terroir.
