WINE MAKING PROCESS
The production of Paolo Saracco's Moscato d'Asti DOCG begins with hand-harvested Moscato Bianco di Canelli grapes, typically picked in late August. After a gentle pressing, the grape must is immediately chilled to preserve its freshness and aromatic potential. Fermentation occurs in pressurized stainless steel tanks (autoclaves) under controlled temperatures, a process that captures the natural effervescence and delicate fruit aromas. The fermentation is halted by chilling when the ideal balance of sweetness and alcohol is reached. The wine is then sterile filtered and bottled cold. A distinctive element of Saracco's process is bottling in small batches weekly, ensuring that the wine delivered to consumers is always at its peak of freshness and vibrancy. The wine is not aged, with all efforts focused on preserving its lively, primary fruit character.
