WINE MAKING PROCESS
Gianni Doglia Moscato d'Asti DOCG is produced from 100% Moscato Bianco grapes, organically farmed on calcareous soils. The grapes are hand-harvested in early September and gently pressed. The free-run must is stored cold and then fermented at controlled temperatures with selected yeasts until 5% alcohol is achieved. A second fermentation takes place in an autoclave to create the semi-sparkling nature of the wine. The wine is then filtered and bottled. It undergoes 6 months of aging in steel tanks.
