WINE MAKING PROCESS
The Moschopolis Aiόra Red 2022 is produced using grapes from sustainably managed vineyards in Thessaloniki. Fermentation occurs in stainless steel tanks at controlled temperatures. The winery employs a philosophy of minimal intervention, utilizing indigenous yeasts and bottling the wine unfiltered with very low sulfite additions. Innovative farming techniques are used in the vineyards, such as hanging grapes high for ventilation and employing double loose tendril pruning. While specific aging details for the 2022 vintage are not available, the winery has previously used Cretan clay amphoras for aging.
