ABOUT THIS WINE
Moschopolis Aiόra White 2020 is a dry white wine from Northern Greece, produced by Moschopolis Winery. It is a blend of 65% Assyrtiko, 15% Xinomavro, and 20% Malagousia. The winery, established in 2016 by Dr. Giorgos Germanis and his family, is committed to organic farming and minimal intervention winemaking, aiming to showcase the terroir of their Thessaloniki estate. The Malagousia component originates from the winery's own vineyard at 230 meters altitude. The wine's name, 'Aiora,' is derived from an ancient Greek festival honoring Dionysus and the revelation of the annual wine.

WINE MAKING PROCESS
The Moschopolis Aiόra White 2020 is produced using grapes that are hand-harvested in small crates during cool hours and cold-stored. The grapes are crushed at a controlled temperature of 8°C for up to 24 hours. Fermentation is carried out using natural yeasts. The wine then spends 4 months aging on its fine lees (sur lie) before being bottled unfiltered. Vineyard management includes innovative techniques such as specific grape hanging heights and maintaining low yields.
