ABOUT THIS WINE
Mufi is a Pet Nat sparkling white wine from Keltis, a family winery in Bizeljsko, Lower Styria, Slovenia. The winery has a winemaking history of over 240 years and is currently managed by Marijan and Miha Kelhar. Keltis is committed to organic and biodynamic farming practices, holding certifications for both. The Mufi wine is produced using minimal intervention, with a focus on natural winemaking principles. The grapes are primarily Yellow Muscat, with a smaller proportion of Sauvignon Blanc. The vineyard is situated at an altitude of 350 meters, with soil types including marl, slate, clay, and sandstone. The vines are between 15 and 30 years old and are oriented towards the north and east. The wine is bottled towards the end of its primary fermentation, with the secondary fermentation occurring in the bottle, a characteristic of the Pet Nat method. It is produced with no added sulfur dioxide and undergoes slight disgorgement.

WINE MAKING PROCESS
The Mufi wine is produced using the Pet Nat method, a traditional technique for creating naturally sparkling wine. Grapes are hand-picked at the start of September. The winemaking process begins with spontaneous fermentation using indigenous yeasts, with direct pressing of the grapes. The wine is then bottled before the primary fermentation is complete. The secondary fermentation occurs in the bottle, generating the wine's effervescence. A slight disgorgement is performed two months after fermentation. No aging in wood is employed; fermentation occurs in stainless steel tanks and then in the bottle. The winemaking philosophy at Keltis emphasizes minimal intervention, organic and biodynamic farming practices, and the avoidance of added sulfur dioxide.
