WINE MAKING PROCESS
This sparkling wine is crafted using the traditional method (Méthode Traditionnelle). The grapes are harvested by hand during the cool early morning hours to preserve their delicate acidity and fresh fruit profile. Following a gentle whole-cluster pressing, primary fermentation takes place in temperature-controlled stainless steel tanks. To achieve its vibrant pink coral color, a small portion of still red Pinot Noir wine is blended into the base wine. After bottling, the wine undergoes a secondary fermentation in the bottle and is aged on its lees (en tirage) for an average of 16 months, adding texture and complexity before disgorgement.
