ABOUT THIS WINE
Taybeh Winery was founded in 2013 by the Khoury family in the West Bank village of Taybeh, aiming to reclaim and celebrate Palestine's ancient winemaking heritage, which dates back thousands of years. Winemaker Canaan Khoury, a Harvard engineering graduate who studied enology at UC Davis, returned to his homeland to craft boutique wines under challenging geopolitical conditions. Sourcing grapes from local Christian and Muslim farmers, the winery provides premium economic support to agricultural families in the region. The brand name 'Nadim' translates to 'drinking companion' in Arabic, honoring both the spirit of shared wine and winery co-founder Nadim Khoury.

WINE MAKING PROCESS
The grapes for this Cabernet Sauvignon are sourced from high-altitude, dry-farmed vineyards in Birzeit, sitting at approximately 900 meters above sea level. Due to regional water restrictions, dry-farming is a necessity that naturally limits yields and concentrates flavors. To preserve freshness, harvesting begins at 4:00 AM so the grapes arrive cool at the winery. The fruit undergoes strict hand-sorting cluster-by-cluster before fermentation in temperature-controlled stainless steel tanks. The wine is then aged in French oak barrels for 10 to 12 months to integrate structure and develop complexity.
