WINE MAKING PROCESS
The grapes are hand-harvested in late September to early October and transported in small 20 kg containers to prevent crushing. Following classical red vinification with a 5 to 6-day skin-contact extraction at 28-30 degrees Celsius, the wine undergoes full malolactic fermentation. In accordance with strict PDO Naoussa Grande Reserve regulations, it is aged for a minimum of 48 months: 24 months in 300-liter oak casks followed by an additional 24 months of bottle aging before release.
