WINE MAKING PROCESS
The production of Nebbiolo d'Alba DOC involves traditional winemaking techniques. Grapes are fermented in stainless steel tanks at controlled temperatures (around 28°C) using a floating cap method for about 10 days. This is followed by soft pressing and a maceration period of 4-5 days. The wine then undergoes aging, with a minimum of one year required for the still red version. Some producers opt for aging for at least eight months in large oak barrels, followed by at least four months in bottle. Riserva wines require a minimum of six months in barrel. Aging can also take place in stainless steel tanks.
