WINE MAKING PROCESS
The production of Nectar Pedro Ximénez begins with the harvest of Pedro Ximénez grapes, which are then subjected to a sun-drying process known as 'asoleo' or 'soleo' to concentrate their sugars. The dried grapes are pressed, and the resulting must undergoes a partial fermentation that is stopped early due to the high sugar levels. The wine is then fortified to approximately 15% alcohol. Following fortification, it is aged in American oak butts using the traditional Solera system for an average of 8 to 9 years. This method involves fractional blending of wines from different ages to maintain consistency and develop complexity.
