WINE MAKING PROCESS
The production of Nederburg Noble Late Harvest involves the hand-selection of grapes affected by noble rot, harvested at high sugar concentrations. Fermentation takes place in temperature-controlled stainless steel tanks at 16°C. The winemaking process includes clarification to stop fermentation at the desired sugar and alcohol levels. The wine does not undergo malolactic fermentation or wood maturation.
