WINE MAKING PROCESS
The winemaking process for Nerello Mascalese Nicosia begins with hand-harvested grapes from the volcanic slopes of Mount Etna. After destemming and selection, the grapes undergo maceration and fermentation in steel vats at controlled temperatures for 8-15 days. Malolactic fermentation also takes place in steel. The wine is then aged in steel vats before a period of bottle aging.
