WINE MAKING PROCESS
Nerocapitano Frappato is produced using 100% Frappato grapes from twenty-year-old vines. The grapes are fermented on their skins for a fortnight. Following fermentation, the wine is aged for a short duration in concrete vats. Natural fermentation is employed, with temperature control not being a primary factor. Minimal sulfur is added only if deemed necessary by the winemaker.
