ABOUT THIS WINE
Cassagne et Vitailles was founded by childhood friends Nicolas Cassagne and Matthieu Vitailles, who set out to craft exceptional wines in the premium terroirs of the Languedoc. Nimalaya is a tribute to old-vine Carignan, sourced from a historic parcel planted in 1954. Located in the high-altitude, cool microclimate of the Terrasses du Larzac area, the vines benefit from dramatic diurnal temperature shifts and unique clay-limestone and blue marl soils. Because regional appellation rules require red wines to be blends, this pure, single-varietal expression of Carignan is classified as a Vin de France, despite being crafted to Grand Cru standards.

WINE MAKING PROCESS
The winemaking process for Nimalaya focuses on preserving the purity and elegance of the old-vine fruit. Grapes are hand-harvested from the 66-year-old vines at optimal maturity. Fermentation is carried out using indigenous yeasts in temperature-controlled tanks. Extraction is kept very gentle to avoid heavy, rustic tannins, emphasizing instead a slender, agile, and velvety texture. The wine is aged carefully to allow the complex mineral and herbal nuances of the terroir to integrate seamlessly with the dark fruit profile.
