Their philosophy emphasizes working in harmony with the environment, employing permaculture and biodynamic principles. The wine's name, 'Nimbus Albus,' translates to 'cloud white,' reflecting its unfiltered character and the winery's interpretation of 'drinking a cloud.' WINE MAKING PROCESS
Kamara Nimbus Albus 2021 is produced using a minimal intervention approach. The Assyrtiko and Malagousia grapes are fermented separately in stainless steel tanks with indigenous yeasts. A portion of the wine undergoes aging on its lees for several months in old French oak barrels, contributing to its structure and body. Spontaneous malolactic fermentation may also occur. The wine is typically unfined and unfiltered, and bottled without added sulfites, reflecting the winery's commitment to natural winemaking practices and expressing the purity of the grape and terroir.
