ABOUT THIS WINE
NITA Priorat is a red wine from the Priorat DOCa in Catalonia, Spain, produced by Meritxell Pallejà. The wine is named in honor of the winemaker's grandmother's home. Meritxell Pallejà, drawing on her experience with prominent winemakers, established her own project to showcase the unique terroir of Priorat. The vineyards are situated on slate-based soil, known as 'licorella,' with vines planted across various plots dating from 1969 to 2008. A distinctive aspect of NITA Priorat is its unoaked vinification, which allows the inherent characteristics of the region and fruit to be prominently expressed.

WINE MAKING PROCESS
NITA Priorat is produced using grapes from vineyards planted on slate soils. The winemaking process involves fermentation in concrete tanks, utilizing wild yeasts. Following fermentation, the wine undergoes aging in concrete tanks before bottling. This unoaked method is a key technique employed by Meritxell Pallejà to emphasize the natural fruit and mineral characteristics derived from the Priorat terroir. Vineyard management includes sustainable practices and adherence to lunar cycles for tasks such as pruning and harvesting.
