WINE MAKING PROCESS
The winemaking process for Nivole begins with hand-harvested Moscato Bianco grapes, which are gently pressed. The must is kept at low temperatures before undergoing slow fermentation in stainless steel autoclaves. This fermentation is controlled to reach approximately 5% alcohol by volume, naturally incorporating carbon dioxide for a light effervescence. Unfermented Moscato grape must might be added to adjust sweetness. Before bottling, the wine is micro-filtered to ensure clarity and halt fermentation. The emphasis is on preserving the wine's freshness, with no barrel aging involved.
