WINE MAKING PROCESS
The 2022 Nostos Vidiano is produced using 100% Vidiano grapes. Vinification involves fermentation with native yeasts in stainless steel tanks. Following fermentation, the wine matures on its fine lees (sur lie) for four months. A small portion, approximately 10% of the production, is aged in French oak barrels for six to seven months. The grapes are sourced from vineyards located between 350-600 meters elevation, cultivated using organic farming methods, with harvests occurring between August 15th and August 25th.
