WINE MAKING PROCESS
The grapes are hand-harvested and carefully sorted. Fermentation occurs spontaneously using native yeasts in open-top oak fermenters with a portion of whole clusters to add structure and aromatic lift. The wine is aged for approximately 12 months in traditional French oak barrels (barriques), of which a small percentage is new, to preserve the pure fruit character and impart subtle spice. It is bottled unfined and unfiltered to maintain its natural complexity.
