WINE MAKING PROCESS
The M. Chapoutier Domaine de Bila-Haut Occultum Lapidem 2019 is produced using 100% destemmed grapes. Fermentation takes place in concrete vats with punch-downs employed for extraction. Following fermentation, the wine undergoes aging, with roughly half maturing in concrete vats and the other half in oak casks (demi-muids). Grapes are hand-harvested. The estate adheres to biodynamic farming practices.
