WINE MAKING PROCESS
The 2023 Ochetti Langhe Nebbiolo DOC is produced from handpicked Nebbiolo grapes harvested in October. The grapes are de-stemmed and pressed, then undergo alcoholic fermentation in temperature-controlled stainless steel vats at 30°C, with maceration on the skins lasting 5-10 days. Malolactic fermentation occurs in steel vats in November. The wine is subsequently aged in steel containers, a process chosen to maintain its fresh and aromatic character. This approach aligns with the producer's philosophy of creating an elegant, fragrant, and harmonious Nebbiolo with smooth tannins and excellent drinkability.
