WINE MAKING PROCESS
Octobre Rouge is produced using natural winemaking methods. Grapes are hand-harvested and undergo carbonic maceration, potentially with whole bunches, for about ten days at low temperatures to retain fruit purity. Fermentation is spontaneous, utilizing indigenous yeasts in stainless steel tanks over six weeks. The wine is aged for a short period of one month in used 500-liter barrels. It is bottled unfined, unfiltered, and without any added sulfites, reflecting a commitment to minimal intervention and natural expression.
