WINE MAKING PROCESS
The winemaking process for Odesa Black Biologist begins with hand-harvested grapes from vineyards in the Odesa and Kyiv regions. Fermentation occurs in stainless steel tanks, with the use of both cultured and native yeasts, and in some cases, spontaneous fermentation. Malolactic fermentation is carried out in oak barrels. Following fermentation, the wine undergoes aging for 9 to 12 months in oak barrels. The producer, Egen företagare Komissarov A.V., operates under the Biologist Craft Winery banner, which is dedicated to biodynamic viticulture and minimal intervention winemaking.
