WINE MAKING PROCESS
Olla Blanc is produced using whole-bunch maceration for two weeks, followed by spontaneous fermentation with native yeasts. The wine is then aged on its lees for eight months in concrete tanks. It is bottled without fining or filtration and with no added sulfur dioxide, adhering to the principles of natural winemaking. The grapes are sourced from the Coume de l'Olla vineyard and are hand-harvested.
