ABOUT THIS WINE
Olla Negra is crafted by Cellers Unió, a historic cooperative founded in 1942 that unites thousands of small-scale winegrowers across Catalonia. This wine comes from the DO Montsant, a rugged appellation that completely encircles the famous Priorat region. Montsant is celebrated for its diverse soils, ranging from limestone to clay, and its Mediterranean climate with continental influences. Olla Negra is designed to showcase the approachable, fruit-forward side of the region, offering an authentic taste of local viticulture without heavy oak influence.

WINE MAKING PROCESS
The grapes are harvested by hand and machine at optimal ripeness. Upon arrival at the winery, they are destemmed and gently crushed. Fermentation takes place in temperature-controlled stainless steel tanks to preserve the vibrant primary fruit characteristics of the Garnacha and Cariñena grapes. Malolactic fermentation is completed in tank to soften the acidity, and the wine is bottled young to maintain its fresh, energetic profile.
