WINE MAKING PROCESS
The winemaking process for Omnia Châteauneuf-du-Pape Rouge begins with destemmed grapes undergoing a 10-day cold maceration before natural alcoholic fermentation commences without added yeast. Fermentation takes place in a variety of containers, including wooden barrels, tanks, and cement eggs. The free-run wine is separated after approximately 10 days of fermentation, followed by a gentle pressing of the remaining mash. The wine is then aged for 18 months in concrete, or alternatively, 24 months in oak barrels, with a philosophy of minimal intervention, including no racking and no sulfuring until a light addition before bottling.
