WINE MAKING PROCESS
The winemaking process for the Ontañon Reserva 2015 begins with grapes sourced from high-altitude vineyards. Following a manual harvest and a double sorting process, the grapes undergo fermentation at temperatures between 26 and 28ºC. The resulting wine is then aged for 24 months in a mix of American and French oak barrels. Following its time in barrel, the wine undergoes a further period of aging in bottle before release.
