WINE MAKING PROCESS
The winemaking process for Organic Anarchy Modri + Sivi Pinot is defined by a profound commitment to natural principles. Grapes are cultivated biodynamically on Rifnik hill, with farming practices certified by Demeter. In the cellar, Aci Urbajs employs a non-interventionist approach: fermentation occurs spontaneously with native yeasts, and the wine is bottled without filtration, clarification, or the addition of sulfur. Aging takes place for at least a year in old Slovenian oak casks, allowing the wine to mature gently while retaining its authentic character. The blend of Modri Pinot and Sivi Pinot is a deliberate choice to express the specific conditions of the vintage.
