WINE MAKING PROCESS
The winemaking process for Antoniolo Osso San Grato begins with spontaneous fermentation using indigenous yeasts in concrete vats, with maceration lasting 18 to 20 days and employing gentle extraction. Following fermentation, the wine is aged for 36 months in large Slavonian or French oak casks (25-30 hectoliters). It is then refined in the bottle for one year before release. Viticultural practices are organic, utilizing cover crops and integrated pest management, with minimal use of SO2.
