WINE MAKING PROCESS
Salton Ouro Brut is crafted using the Charmat method, where the secondary fermentation takes place in pressurized stainless steel tanks (autoclaves). The wine undergoes 6 months of maturation on its fine lees (autolysis) before bottling. This extended contact with yeast cells imparts creamy textures and complex autolytic notes while preserving the bright, fresh fruit character of the Chardonnay, Pinot Noir, and Riesling Itálico grapes.
