ABOUT THIS WINE
Ox & Rooster Reserve Merlot is produced by Distileria Bulboaca, part of the Castel Mimi Group in the Codru PGI of Moldova. The estate traces its origins to 1893 when Constantin Mimi, the last governor of Bessarabia, built one of Moldova's first chateau-style wineries. Vineyards sit along the right bank of the Nistru River near Speia village on fertile Chernozem soil, combining over 130 years of history with modern viticultural standards.

WINE MAKING PROCESS
Hand-harvested at peak phenolic maturity from 26 hectares near Speia village, the grapes undergo strict sorting, gentle destemming, and crushing. Fermentation occurs in temperature-controlled stainless steel tanks at 28–32 °C with regular pump-overs to extract rich color, aromas, and smooth tannins. The wine is aged for 6 months with French oak before being bottled in eco-friendly lightweight glass.
