WINE MAKING PROCESS
The P.F. Bobal 2016 is produced from 100% Bobal grapes grown on ungrafted, old vines. The winemaking process involves fermentation with indigenous yeasts, often in open oak vats or small wooden barrels, sometimes incorporating whole clusters. Malolactic fermentation also takes place. Following fermentation, the wine is aged in French oak barrels for approximately 10 to 12 months. The producer, Bodegas y Viñedos Ponce, adheres to organic and biodynamic farming practices.
