WINE MAKING PROCESS
The winemaking process for Paço de Teixeiró Avesso involves hand-harvesting grapes into 20 kg boxes. Following partial destemming and light crushing, the grapes undergo gentle pressing. Fermentation takes place in stainless steel tanks at medium to high temperatures. The fermentation is completed in 300-liter French oak barrels, and the wine is subsequently aged on its total lees for six months with batonnage.
