WINE MAKING PROCESS
The País Viejo is made from 100% País grapes grown on centenarian, dry-farmed vines in the Maule Valley. The grapes are hand-harvested and then naturally vinified using century-old techniques. Fermentation takes place in cement tanks with native yeasts, and the zaranda, a traditional structure made of sticks, is used for destemming. The wine undergoes no aging in wood, preserving its fresh and authentic character.
