WINE MAKING PROCESS
Paleo Rosso is produced from 100% Cabernet Franc grapes. Following harvest in September, fermentation and maceration take place over 20 days in concrete tanks. The wine then undergoes an aging period of 16 months, utilizing a combination of new oak barrels and stoneware amphora. The estate is organically farmed, with some exploration into biodynamic methods, reflecting a philosophy of expressing the purity of the grape and the unique terroir of Bolgheri.
