WINE MAKING PROCESS
The Heinrich Pannobile 2021 is produced using grapes hand-picked at optimal ripeness. Fermentation is spontaneous, utilizing native yeasts in wooden tanks, followed by a three-week maceration on the skins. The wine is gently pressed with a basket press. It then undergoes maturation for 21 to 31 months, primarily in used 500-liter oak barrels, with some sources also mentioning aging in clay amphorae. The winery adheres to certified organic and biodynamic farming practices.
