WINE MAKING PROCESS
The winemaking process for Pannobile begins with spontaneous fermentation using indigenous yeasts in wooden vats. Following fermentation, the wine undergoes a three-week maceration on skins. It is then aged for 24 months in used 500-liter oak barrels. The grapes are sourced from vineyards located on south-facing slopes in Gols and east-facing slopes in the Leitha Mountains. The winery adheres to biodynamic and organic farming practices, focusing on biodiversity and minimal intervention.
