ABOUT THIS WINE
Papillon is a delicate natural red wine produced by O2Y, an artisanal estate based in Poligny within the Jura region of France. Originally founded in 2020 by Olivier Guala, Yves Roy, and Yoshinori Kuroda, the estate is now guided by Olivier alongside Romain Doerler, a talented Alsatian oenologist who trained under the legendary natural winemaker Jean-François Ganevat. The name Papillon, meaning butterfly in French, perfectly captures the wine's light, ethereal, and playful character. The 2023 vintage represents a significant milestone for the estate, as a warmer growing season allowed them to harvest and bottle Trousseau from their own estate-managed plots for the very first time.

WINE MAKING PROCESS
This wine is crafted from 100% Trousseau grapes grown on Triassic marl soils. The vineyards are farmed using certified organic and biodynamic practices, with all harvesting completed by hand. In the cellar, the whole bunches undergo a three-week carbonic maceration to enhance bright fruit aromatics and maintain a delicate structure. Fermentation occurs spontaneously using only indigenous yeasts in stainless steel tanks. To preserve the purest expression of the terroir, the wine is bottled unfined and unfiltered with zero added sulfur dioxide, keeping the total SO2 levels well below 10 mg/L.
