WINE MAKING PROCESS
The Parajes del Valle Monastrell Ecológico 2022 is produced using 100% Monastrell grapes. Alcoholic fermentation is initiated in stainless steel tanks and completed in concrete tanks, utilizing wild yeasts. Following fermentation, the wine is aged for six months in concrete tanks, a technique chosen to maintain the wine's natural fruit expression and freshness. The grapes are harvested by hand. The winery's approach emphasizes minimal intervention and a deep respect for the environment, employing certified organic and biodynamic farming practices, alongside dry-farming and the preservation of traditional viticultural systems.
