WINE MAKING PROCESS
Parajes del Valle Monastrell is produced from 100% Monastrell grapes grown under certified organic conditions. The vines range from 15 to 40 years old and are situated at high altitudes (600-800 meters) on limestone or sandstone soils. The viticulture employs dry farming and the traditional 'Terraje' system. Harvest is manual. Vinification involves fermentation in stainless steel tanks, followed by malolactic fermentation in concrete tanks. The wine is then aged for 8 months in concrete tanks. Notably, no sulfur is added at bottling.
