WINE MAKING PROCESS
The winemaking process for Paredaux Cuvée Paredaux Blanc begins with a night harvest to maintain grape freshness. The grapes are then vinified separately under inert gas to prevent oxidation, followed by pneumatic pressing and cold settling of the juice. Fermentation occurs over three weeks at a controlled temperature of 17°C. Post-fermentation, the wine is aged on its lees for three months before blending. This meticulous approach aims to preserve the aromatic purity and vibrant character of the Terret and Rolle varietals.
