WINE MAKING PROCESS
The Paso las Mañas Artuke 2021 is made from 100% Tempranillo grapes. The fruit is destemmed and vatted by gravity into stainless steel tanks for fermentation, utilizing indigenous yeasts. Malolactic fermentation occurs spontaneously in either French oak barrels or stainless steel tanks. The wine is then aged for 12 to 16 months, primarily in large French oak foudres and used French oak barrels. The vineyards are organically farmed, and the grapes are hand-harvested with selection at the vineyard and winery.
