ABOUT THIS WINE
Pasotismo Moristel '76 is a collaborative project between British winemakers Thomas and Emma Holt of Paso-Primero and Nicolás Brun Aguerri of the Spanish estate Batán de Salas. The name 'Pasotismo' is Spanish slang for a rebellious, relaxed attitude, reflecting the winemakers' philosophy of ignoring stuffy regional guidelines to create highly drinkable, modern Spanish wines. Sourced from old Moristel vines planted in 1976 in the Somontano region of Aragon, Spain, this wine highlights a rare, indigenous grape variety. The vineyards sit at high altitudes in the southern foothills of the Pyrenees, benefiting from a high diurnal shift that preserves natural acidity.

WINE MAKING PROCESS
The winemaking process for the 2022 vintage focuses on preserving the fresh, crunchy fruit character of the Moristel grape. Grapes are hand-harvested from old vines and undergo partial foot-treading, with 35% left as whole bunches. Fermentation includes partial carbonic maceration and 15% stem contact, followed by an extended skin-contact maceration in concrete tanks for four to six weeks. The wine is matured entirely in concrete tanks for 12 months with zero oak usage to maintain purity. It is bottled in lightweight Burgundy-style glass to minimize emissions and sealed with a high-performance DIAM cork.
