WINE MAKING PROCESS
The winemaking process for the De Angelis Passerina Offida begins with cryomaceration of the grapes at 0°C for 8-10 hours, followed by soft pressing to extract only the free-run must. Fermentation occurs in steel tanks at a controlled temperature of 15°C. The wine then undergoes refinement on fine lees until the end of February, with weekly stirring to build structure. Grapes are hand-harvested and selected.
